Roasted Cauliflower

I found a recipe a couple of years ago and it has become a staple in the rotation. It seems to be a crowd pleaser and even the kids love it. Perfect dish to bring to a party. It's fresh, healthy and sophisticated.
It's one of those recipes that you can play with and make your own so go ahead and give it a tweak.

You will need
One head of cauliflower
2-3 Garlic cloves minced or chopped it's up to you
Lemon juice from 1 lemon
{I use White Wine if I am out of lemons}
Olive oil
Fresh Parmesan cheese
Coarse salt and fresh black pepper


How to prepare
Preheat oven to 400
Cut cauliflower into florets {love that word}
Place in a casserole dish
Toss in the garlic
Cover each floret with lemon juice and olive oil
Season with salt and pepper {I throw in random herbs too}
Bake at 400 covered for 30 minutes
Uncover and sprinkle Parmesan cheese on top
Bake uncovered for about 5-8 min or until cheese has browned

  2. Yum! and healthy too! We've always breaded and fried them. Delicious but it has resulted in fat thighs. This is a much better way to go.

  3. Home girls! Dina I love anything breaded and fried but it has never ended well for me. I try to cook much lighter these days. I can't believe how much my daughters love this dish.
    Sue you seem to cook healthy...I would love to know some of your recipes. I am in the process of perfecting a Bloody Mary which I will post soon.
